Sweet Onion and Blended Cheese Pizza

makes one 10 x 15-inch pizza

1 Tbsp olive oil

2 large thinly sliced Spanish onions

1 Tbsp sugar

1 (10-ounce) pkg prepared pizza crust                                                                                         

1 (15-ounce) container part-skim ricotta cheese

1/2 cup shredded part-skim mozzarella cheese

1/3 cup grated Parmesan cheese

1 ounce sun-dried tomatoes (about 12)

3/4 cup boiling water

1/4 cup chopped fresh parsley

  1. Preheat oven to 450 degrees. Melt margarine in a large skillet. Add onions and sugar; sauté for 10 to 15 minutes, stirring frequently, until onions are caramelized. Keep warm.
  2. While onions are sautéing, unroll pizza crust on a baking sheet sprayed with cooking spray. Flatten dough into a 10- by 15-inch rectangle. Combine ricotta, mozzarella and Parmesan cheeses; spread over crust. Top with onions, sun-dried tomatoes, and parsley.
  3. Bake on bottom rack of oven until crust is browned (about 10 to 15 minutes).
