April Fool’s Pizza Pie
(makes four 6-inch pizzas to serve 16)
1 (18-ounce) package refrigerated sugar cookie dough
½ cup frozen raspberries, sweetened
1 tsp lemon juice
2 large kiwi, peeled and sliced into small triangles
1 cup pineapple tidbits, drained
1 cup fresh strawberries, hulled and sliced
½ cup powdered sugar
2 Tbsp milk (or enough to make a drizzling frosting)
¼ tsp vanilla
1. Remove wrapper from sugar cookie dough. Divide dough into four equal parts. Using your fingers or a rolling pin, press dough into four 6-inch diameter circles on an ungreased baking sheet. Bake at 350 degrees for 10 to 12 minutes or until edges are lightly browned. Remove from oven; let cool on cookie sheet.
2. Combine raspberries, sugar and lemon juice in container of a food processor or blender. Cover and process until smooth. Spoon sauce over cooled cookies spreading to within ¼ inch from the edge. Arrange kiwi, pineapple and strawberries over top.
